Movie screen to your plates


Many a times a movie sets on fire a certain craving.
Cuisines which you saw them make or eat or fell in love over. Ratatouille is one such movie!

I almost never put a recipe on my blog but this one succeeded to win  over many hearts at home and finally paved way for this blog. 

It is not every day in India that you get to eat ratatouille. It is a perfect summer dish with many colors and flavors. The sauce is light and robust with the freshness of herbs and tangy flavor of tomatoes.

I may not be right when I say that I know why Remy chose a pheasant dish to serve to Ego on the big day but I guess it is the nature of the dish. On the exteriors it in an array of colors and veggies arranged beautifully like Linguni who is Remy’s hands in the kitchen and underneath is the sauce which is the “Rockstar” Remy.

Ratatouille is both put together as one and doesn't do justice served separately.

I tried making this at home!

I)We prepare a sauce first

1)This is the first and the fun part of the recipe. Colorful bell peppers- green, yellow and red charred over fire and wrapped in aluminium foil and steamed for 15 mins. Remove seeds and ribs and roughly chop them and keep aside. Trust me the smoky flavor of the peppers will make pepper hater fall in love. I had come out of the closet with my hatred for Bell peppers many years back.




2) Saute finely chopped garlic, onion and diced carrots in olive oil. Add chopped celery stems to it. Add the charred and steamed chopped peppers and few sprigs of fresh parsley. 
Add coarsely ground pepper powder, chilli flakes and salt.







2)Puree tomatoes (boil, de-skin and blend) and add it to the sauteed vegetables.

Boil for 10 mins and keep aside to cool


                                       




3)Blend in to a sauce once cool and pour it into the baking tray.

Add a few sprigs of fresh thyme for flavour before you start arranging your vegetables

                           


4)Thinly (like seriously thin) slice Green zucchini, yellow zucchini, squash , egg plant and tomatoes.

Arrange them alternating the colors as given below.

                     
5)Make a seasoning of pepper powder, garlic, thyme and olive oil and pour generously on the vegetables .


                  
6) Cover them with foil or parchment paper and bake at 220 degree for about an hour.

Before you serve you make bake it for another 45 mins without the foil/paper.
